02 / What is makhana

The seed that sleeps at the bottom of a lake.

Makhana grows underwater. The seed sits in the silt of still, high-altitude wetlands, ponds that freeze over in winter and run clear again in spring, and it is lifted out by hand, one slow pass at a time.

Then it is dried, graded, and dropped into a pan hot enough to turn the starch inside it to steam. The seed pops. A hard black bead becomes something light enough to sit on your palm without you noticing.

No oil goes near it. No coating, no dusting, no second ingredient hiding behind a comma on the back of the packet.

    We wanted the crunch without the fryer. Everything we tried came back oily, over-salted, or dusted in something we could not pronounce.

  2. 2024 / The water

    We went to the source. High-altitude wetlands. Ponds that freeze in winter. Families who have harvested this seed by hand for generations.

  3. 2025 / The pan

    We spent a year on heat and timing. Too little and the seed stays a bead. Too much and all you taste is the pan.
